On the corner of rue de Longue Haie, where just a few months back you’d still find the restaurant « De la Vigne à l’Assiette », now stands a new kind food venue : Le Local. Rather an innovating food lab than a restaurant per se, Le Local brings together both a strong no-waste philosophy and medley of super creative chefs, united by strong common dreams and values.

The freshly renovated room displaying a brillant palette of dusty pink, deep blue and sea-green shades is the perfect setting for a weekday lunch, prepared by Laura, one of the founders, and served by Aubane, her partner. Daily specials, soup and roskas (a sort of stuffed brioche) are available in different combinations. We had an amazing pumpkin lasagna and a great farmer chicken with a fabulous arugula pesto (18€ with either a starter or dessert).

On Friday and Saturday nights, Laura will cook a somewhat more sophisticated three course menu (33€), served with wine pairing (15€ for three glasses) selected by Eddy Dandrimont, former owner of De la Vigne à l’Assiette.
It’s on Wednesdays that things really get serious at Le Local. The usual evening drinks are replaced by a very special “Marrecredi” : the perfect moment to cut the week in half and enjoy a few treats with a glass of wine or two. The interesting part : the tapas are made by a guest chef who changes each week. Celery flan, spelt risotto, meat pies with parsnip mousse (from 8 to 14€)… there definitely isn’t any real competition to the tapas you’ll find at Le Local on Wednesday nights. On Thursdays, you’ll find yet another guest chef making the dinner menu, setting their grounds in the kitchen for a six-months period of time. But what really strikes us is the common dream of the team, for a more sustainable and sensible way of eating.
But most of all, the shared determination to make that dream come true.
