Speculoos

Last night, we celebrated Saint Nicolas at my mom’s house. She had prepared tons of amazing stuff,  and her homemade speculoos were one of them.
Ok, it’s cheating a little, cause we didn’t actually make this recipe ourselves. But it’s so good that we’re keeping it safely for when they won’t be any left. Shouldn’t take longer than a few hours.

For about 40 speculoos cookies:

– 500gr flour
– 250gr of brown sugar (cassonade)
– 200gr of butter
– 2 eggs
– 2 teaspoons of speculoos spices
– 3 teaspoons of powdered cinnamon
– 2 teaspoons of chemical yeast
– 2 pinches of salt

Mix the flour, sugar, spices, salt, and yeast and make a well. Pour the whisked eggs into it.
Mix with your hands and form a sausage. Wrap it in cellophane, and keep in the fridge for two days.
Take it out, cut into small slices, make little balls then spread with a rolling pin till the dough is about 1cm thick. Then cut out shapes. Put on greaseproof paper and in the oven at 180°C for only 10 minutes to keep them a little soft on the inside.
