On the corner of Rue des Éperonniers, just steps from the Sablon and the Grand Place, you’ll now find Lil’ Bouche.

It’s the third spot opened by Antoine Cornil, and without a doubt the most dialed-in one yet.

If you’re based in Brussels and already into specialty coffee, you’ve probably heard of Bouche – or Antoine himself. And if not, here’s a quick way to put it: “specialty” refers to a whole set of quality standards, from how the beans are sourced to how they’re roasted and, ultimately, how your cup is prepared. It can feel a bit abstract at first – which is exactly why you’re here

At Lil’ Bouche, everything is designed to make that world more approachable. Four coffees on the menu, four distinct flavor profiles, explained both through a visual guide on the wall and by a particularly well-trained team. You start by choosing your coffee, then pick the espresso-based drink that will showcase it best. The hardest part is holding back from trying everything.

No filter coffee here – just a menu entirely focused on espresso-based drinks. I tried the Luis Anibal (twice), which I absolutely loved as a cortado with oat milk. Another standout was the Rosado Project as an espresso tonic, with notes of mango and tropical fruit – honestly incredible. And for a straight espresso, I’m torn between La Suiza and Sawana, both excellent but with very different flavor profiles. The coffees rotate regularly, along with their profiles, which gives you a real reason to keep coming back.

What really sets this place apart, beyond the impeccable quality, is the experience. You can walk in and go with the flow, or take your time and ask a hundred questions.
